One of the perks of Military Retirement. I'm a retiree not a Veteran is the official designation.  Is the privilege of access to all Military facilities just as active duty.  Stopped by JRB Ft. Worth and hit up the Commissary earlier.  Beef back ribs usually $3.99lb were on Sale for $0.99lb.  Four racks for less than $16.00. Weather good this weekend.

Bout to show up and show out.20220218_232030.thumb.jpg.cd2ee9b3dbbe2015c90541d5e1614fcb.jpg

Haven’t fired up the smoker since last June. Decided to do a little taste test for some St.Louis racks. Been using Simply Marvelous rubs for a few years, very good rubs, but looking for a new profile. I’ve been wanting to try Meat Church’s rubs, I have heard great things from some buddies. Hands down Meat Church was the preferred rub. Much finer and great taste. It has more of a orange appearance compared to the darker Simply Marvelous.

Decent. Closest thing to Popeyes without being Popeyes. I fuck with the red beans and rice and mashed potatoes and gravy. The biscuits are good.

Damn not passing the vibe check,  hopefully @TheMaximumHornetStinghas something good to say about them, the way everyone is talking up here about boojangles you would think it’s the best food ever created

Its decent. They usually have a little buffet looking area where you can kind of see the sides and all, but they fix the order for you. The chicken is similar to Popeyes.

Id hot Bojangles before KFC if thats any help.

Chili night! And it’s real chili. None of those beans in here, that’s not chili.

Sweet!  I dig your recipe more than my wife's because she adds beans lol.  She tells me beans are healthy and the taste is masked well with the fire in her potion last night.   :)    I'll add a pic shortly from leftovers in fridge.

Personally I don’t love beans in my chili, but I will make it sometimes with them if I’m just doing a easy and quick chili and use ground beef. It definitely is a debate on the beans vs. no beans.

Beans are for Burritos not Chili.  In Texas beans are a NO GO in Chili.  Now a bag of Fritos smothered in chili, cheese and onions are a Texas delicacy.  We even named Dat Sumabitch a Frito Pie 😁

First attempt at a pellet grill smoked brisket. Second overall attempt at a brisket period. This time it turned out much better than my first stick burner attempt. Definitely done and very tender.

Pellet grill makes maintaining a temp much easier, but, not quite the same as a traditional smoker as far as bark and flavor but, not too shabby for an Easter meal.

How long did you smoke that?

13 hours at 225 the last 6 were wrapped in butcher paper. Rested in a cooler for 1 hour before I unwrapped and sliced.

The internal was 198 on the thicker end and 204 on the thinner end when I pulled it off the smoker.

Sounds like you nailed that cook. I’ve been itchingto do a brisket myself. The thing is I would only do a whole packer and I need an event (superbowl) or a holiday when I have a lot of people over because it’s so much meat and seems like I have too much leftover, even repurposing with chili

Personally, I’ll take a great tri tip all day long for way less work. I just like the flavor better and it’s my favorite meat. When I go out for BBQ. I rarely ever order ribs. I’m usually disappointed and feel I can make better. Brisket is the one bbq item I will order at a bbq place. Done right they can do it better than me and  it’s kind of what I use as a barometer.

I have a lot left over. I'll have some sandwiches later in the week off of it. That was a 13 pounder before I trimmed it some. I haven't thought about adding to a chili. Great idea! Thanks.
