West Monroe vs Carencro 96 is a classic, Carencro with the athletes and West Monroe with the program.  It's fun to watch # 45 Tommy Banks, went on to LSU and is now Dr. Tommy Banks...  started 4 years at West Monroe and never was tackled for a loss.  Great Game!

Also of note, this is the team where West Monroe started their run, went undefeated 3 straight years and won LA 5A back-to back-to-back (still the only 5A team to win 3 in a row) 1996, 1997, 1998.  They were something special  :D

1994 4A John Curtis vs Salmen

1991 Texas 5A Div II State Championship game at Texas Stadium. Odessa Permian vs. San Antonio Marshall

gOOgle 1990's Georgia AAAA state football championships. They have three or four listed, in addition to the epic 1994 AAAA semis in the Georgia Dome, between Valdosta and Southwest Dekalb! Who sported 30 college signees in their SENIOR class! Also listed is the 1989 AAAA state championship between Valdosta and Clarke Central in Athens! Valdosta finished 14-1 that year, and was ranked #2 in the country, until you know who knocked um off in regular season, 7-0 on national television!

That St. Mary's-Horizon game was the only 1990s Arizona title game I've been able to find; the St. Mary's quarterback (Ryan Kealy) was a top-100 recruit that would become ASU's starter immediately after Jake Plummer graduated; had the Devils in line for a Fiesta Bowl bid before tearing up his knee early in an eventual loss to UofA.  A lot of people here still say he was the best natural passer ASU had but was never the same after his injuries.

Not entirely what was asked for but this is 1976 state title game between Coronado and South Mountain; Coronado would finish ranked in national top 20 & their quarterback (Greg Brady...seriously) would end up at USC and play on a national championship baseball team while there:
