After you posted this I went out bought a plate. 4 Bones. I agree like the best of Brisket on the bone. They look nothing like that when you start. Them bad boys rise up. Done right they are damn near unbeatable as far as BBQ beef goes. I smoked oxtails for 3hrs and then braised them for 2 more. It's like the best roast you ever had. Another tough cut when done right is amazing I'm gonna do my Dino's in about a week and Oxtails. Stopped marinating my tri tips about 10 years ago, but this was really good, think I’ll go back. As I’m thumbing this reply, I am enjoying the smell of beef jerky dehydrating . Wife will be sending a nice package to our daughter with this included. A Best Buy off Amazon years ago. Nesco is the brand we’ve had success with. 6 hrs is my good enough stopping point, thinly sliced imo is best, but if you dig the chewy style, thicker cut and 4 hrs or so should do it. I do want to try pit beef though. I don’t usually put bbq sauce on my tri tip, but on a authentic Central Coast Tri Tip sandwich, it always has a good BBQ sauce on it.
